Sweet Potato Hash

The best way to add nutrients to your breakfast is to put some veggies in it. Here's a delicious vegetable hash that tastes great, fills you up and packs a nutrient power-punch.

Ingredients

 

2 Tbsp avocado oil
1 small sweet potato, cut into a small dice
1 large shallot, sliced thin
1/2 red bell pepper, diced
Salt & pepper to taste
Optional:
- 5 small cremini mushrooms, sliced
- Large handful fresh baby spinach
- red pepper flakes to taste

Directions

 

In a large skillet, heat oil over medium reheat. Add sweet potatoes and cook, stirring periodically for 6-7 minutes. Add shallot and continue cooking until they are slightly browned. Toss in mushrooms and cook until browned on edges. Season to taste with salt, pepper and red pepper flakes. Add bell peppers. Cook an additional 2-3 minutes until crispness is gone. When all vegetables are cooked to desired texture, add spinach leaves. Cook until just wilted. Adjust seasonings as needed and enjoy a hearty, veggie-packed breakfast.
